Update on my life:

My graduation is this saturday at RIT, schools been out, I have no summer job because im leaving for SLC in about a month (assuming I can find a roommate) because we cant move into the dorms till late august, my dorm roomie is awesome, her name is shannon, from what I know of her she doesn't do sports, she likes italian, and she's afraid my bed will be cooler than hers if mine is lofted and hers isn't :P Ill get to meet her after my orientation which is July 8-11. I get to go rafting, rock climbing, hiking, all that good stuff!!

I just got a letter from the US Olympic Committee recognizing that I am an athlete in training and that I will receive in-state tuition at the University of Utah! I feel special. This is pretty cool, they said I am in a programme "which trains and prepares athletes for international and future Olympic competition." Is that where im going?!?! Wow! Now im kind of excited.

Still haven't decided if I will do long track or short track. Il probably try to do both until I absolutely have to pick. I have the build for long track and I HATE short track relays. But there still something about ST. We'll see!

My major: I told them it's sports sciences, but ill probably switch to environmental sciences, then after my first year I might just transfer to the culinary school! How cool would it be to major in cakes and minor in chocolate??

Amish Friendship Bread

This stuff is cool! I got a starter bag from Tina M, I thought she was trying to poison me at first when she told me what was in the bag she gave me. Its batter that sits and ferments on your counter for 10 days. It starts with one person then they add sugar, milk and whatnot, they put some in bags and pass it on to 3 people! I couldn't help but think.... how long exactly has this batter been going around?? Just don't smell it itll its done cooking and becomes the most amazing smell ever. I think you have to get a mix to start one, maybe there's a recipe on the internet. It's easier to just know someone with starter bags. (AKA me) So heres what you do to it over 10 days...

Amish Friendship Bread

Day 1 You have just received fermented batter in a one-gallon ziplock bag. Do nothing! Just place the bag on your kitchen counter.
Day 2 Squeeze the bag several times
Day 3 Ditto
Day 4 Ditto
Day 5 Ditto
Day 6 Add 1 cup flour, 1 cup sugar, and 1 cup milk.
Day 7 Squeeze the bag several times
Day 8 Ditto
Day 9 Ditto
Day 10 In a large plastic bowl combine the batter with 1 cup flour, 1 cup sugar, and 1 cup milk. Mix with wooden/plastic spoon. Pour three (3) 1 cup starters into one-gallon ziplock bags. 1 cup starter in each bag.

Give these away to friends with a copy of these instructions.

Now- to the remaining batter in the bowl add and mix well together:

1 cup oil
1 tsp vanilla
3 large eggs
1/2 cup milk
2 small boxes instant vanilla pudding
1/2 cup raisins, nuts, chocolate chips, toffee bits, or coconut (optional)

1 cup sugar
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon

In a separate bowl mix 1 tsp cinnamon with 3 tbsp sugar and sprinkle into 2 well- greased loaf pans before pouring the batter into the pans.

Bake at 325 degrees for one hour or until done. (When a toothpick comes out clean)


1. Do not use metal spoons or bowls for mixing.
2. Do not refrigerate.
3. If air forms in the bag- let it out
4. it is normal for the batter to thicken, bubble, and ferment.
5. Have fun and enjoy. Spread the fun!
