Carrot Spice Muffins!!!!



EVERYONE LOVES MY MUFFINS!!!! So I thought id post the recipe. I have recently tweeked it to make it healthier, which actually made them taste ALOT better. THEY ARE DELICIOUS even if you dont like carrots. Seriously. You can get hemp milk and agave nectar at wegmans, DO NOT SUBSTITUTE these 2 ingredients, they are what make this recipe AMAZING!!

1 1/2 c whole wheat flour
1t soda
1t powder
1/2 t salt
1/2 t cinnemon
1/4 t nutmeg
1/8 t ginger
1/8 t allspice

-------mix dry ingredients together in lg bowl---------

1/3 c raw agave nectar (this is the sweetener)
1 egg
1/2 c hemp milk (VERY good for you, omega 3 and 6, 49% calcium + other vitamins and essential fats)
1/3 c olive or canola oil
1/2 t vanilla
1 1/2 c finely grated carrots (get them from a local farmers market, they taste better)

--------mix the wet ingredients together in med. bowl------

-------mix the wet stuff into the dry stuff just untill moist------

-------bake at 400 untill done, for my oven its about 18 minutes----

When you take the muffins out of the oven put them all in a ziplock bag to cool, this way the little drops of water on the sides of the bag drop back to the muffins which make them all moist and yummy.


The delicious Hemp Milk!!! Hmm..howd the maple syrup get in this picture?! Isnt it funny how it seems to appear in all my pictures?

Rochester Meet

Ok so im not much of a reporter, plus just about everyone who reads this was at the meet and KNOWS already how it went. (51.34s 500m!!!!!! OMG!!) Sooo....Ill just put up some pictures Marcia gave me :) Anyone have more pictures?

Clarence Invite

EVERY year we run this, its MUDDY and RAINY and COLD and MISERABLE. This year, It was MUDDY and RAINY and COLD and MISERABLE. Fortunatly it did clear up towards the end of the races. I forgot to wear my contacts so I was doing the windshield wipers the whole time :P. We may as well have been running through a mud pit the whole time. My legs looked a little cleaner at the end than in the middle but thats only because of all the knee high pond-like puddles we ran through. Thats XC for ya.

Pancake Review #5

The other day I made 23 apple pancakes for my math class. Then I came home and made 3 more for lunch. I got rave reviews on them and an email saying how awesometastical the were, even being cold and a few hours old and with no syrup!!! The original recipe was from a cookbook my brothers fiancee gave to me called "How To Cook Everything" but I chaned it around a little.

Apple Pancakes

INGREDIENTS:
2c flour
1 tbl baking powder
1/2t salt
1 tbl sugar
2 eggs
1.5c milk
2 tbl melted butter
Vanilla extract to taste
2-3 peeled grated apples

PREPARATION:
Mix dry ingredients. Beat eggs in the milk then stir in the butter and vanilla. Stir it into the dry ingredients. Lumps are good. Add the apple.

Equipment Used:

Skillet, big plastic flipper, large mixing bowl, small mixing bowl, measuring cups, a whisk, a grater, and a peeler.

Strengths:

These are DEFINATLY fantastical. They are good even without maple syrup so you can put them in a baggie and have a snack later. Fluffy but dense and filling at the same time.

Weaknesses:

You know what? I CANT THINK OF ANY!!!
Notes:

Everyone loves apple pancakes, good for monday mornings, definatly. If you want to add some whey protein to them they would make an awesome post workout snack. They smell DELICIOUS!


Unfortunatly I dont have a picture of them, before I left I took a picture of that ginormous stack fo 13 pancakes, but I guess it got deleted. Forshame!!!

American Cup I



WOWWWW!!! AWESOME meet. I pretty much had a party after my 1000m final. I PB'd by 6 seconds with a 1:48.5!!!! In my 1500m superfinal, I took off a heaping 15 seconds with a 2:48.4!!!!
The 500m was frustrating, I got stuck behind some slow skaters who didnt feel like letting me by, but thats short track :P

Ansis got his awesome new USA skin!! He did crazy good in his 1000m heat. Its all in the skinsuit. Im tellin you, that race was INTENSE. Even to watch.

Ryan wiped out in one of his races and smashed into a water bucket! He TOTALED that bucket, I think Mikey got a picture. In another race, some guy took him out and he twisted his ankle and was out for the rest of the meet. It was funny, they guy was trying to tell him what to do with his sprain, but Ryans a NURSE, HAHA!! It looked like he was about ready to punch him out. I would too. He really didnt know what he was talking about. Not only did he tell him to take Tylenol instead of IB prophin, but he pressed ice on it without wrapping it first.

I love the car rides, they are the 2nd best part of the races! When we were about to leave for the meet, my mom locked us out of the house so we had to climb into the back window to get in. That was fun. Then we watched Bourne Supremacy in the car. On the way back we stopped at starbucks for pumpkin spice lattes and this rest stop where I got a cool finger sock!! I did NOT enjoy the ambushing and the tickling though, at one point I fell inbetween the seats and nearly kicked Ryans face in. I almost lost my coffee too.

Hockey Walls and Scary Falls

Ive come up with an equation...it goes like this... THE WALL + MY NECK= DISASTER. The first couple times ive fallen this year ive hurt my neck. Why? I dont know. It never happened last year, and I cant figure it out. It does scare me though. Every time Ive fallen so far (this is the in between part before hitting and after falling) ive thought "CRAP ILL NEVER BE ABLE TO SKATE AGAIN! ILL NEVER MAKE IT TO THE OLYMPICS!" I usually have tons of fun during practice, even when I fall!! And when we did our circle drills today the only thing I could think of was "please dont let my blades give out". They did if your wondering. And what did I do then? I curled up in a little ball, covered my head and waited to crash. Then I sat there longer than I should have wondering what the hell just happened.

I wish I had that talent Ansis has, if he loses his footing or boots-out, he somehow digs his blades back into the ice and saves himself!

Then on the way home, I got to thinking. And I says to myself, I says, "Self, when I think about falling and killing myself, Im NOT thinking about technique or speed therfore NOT thinking about speed skating therfore NOT thinking about my ULTIMATE GOAL IN LIFE which is to SKATE IN THE OLYMPICS. If I lose sight of that goal it will never happen.

So now heres where I make a new conclusion to this equation. THE WALL + MY NECK= I FALL, I FORGET ABOUT IT, I GO FASTER!!!!
I WILL kick ass in the American Cup I this weekend and I WILL skate faster than ever before and I WILL, repeat..I WILL earn the right to call myself an Olympian!!!

NOW IM GONNA GO MAKE COOKIES!! YEAHHHH!!!!!!!!

Chittenango Invitational


I would rather have gone to speed skating practice this morning, but I guess its just as well. I heard that the geniuses at the Genesee Valley rink schedules an HOCKY TOURNAMENT over OUR PRACTICE. I suspect they will be making this up to us, since we all paid for this ice time they threw away....I feel bad for Marcia and Eleanor who drove all the way from somewhere out past Syracuse and Craig who comes from Buffalo!

Anyway about the meet...this one team, FM (in the green spankies) who are ranked number one in the nation were there. So getting second for us would have been like winning. Which we did. BUT! They got DQ'd for doing an extra strideout at the beginning!!!! Can you believe that!? We took their trophy home today. As well as the winners T-shirts. Their disqualification bumped me from 21st to 14th overall with a time of 20:10. The course was just under a 5k.

I was doing a cool down with the boys team when we got lost and started a bushwhack. Half way through this adventure my friend and I found out the hard way they like to hide barbed wire in the woods! Luckily we are both up to date on our tetanus shots.
